Tarragon Chicken Salad
Serves 4 – 6
What you need:
3 cups shredded, cooked chicken (or cubed)
1 cup diced celery…about 2 stalks
1/3 cup finely chopped red onion…soak in ice water for 15 minutes to soften flavor and drain
1/2 cup chopped pecans
1/2 teaspoon dried tarragon or 1 tablespoon fresh tarragon finely minced
1/2 teaspoon black pepper
1/2 teaspoon salt
2 tablespoons Tarragon Vinegar
1/4 cup mayonnaise
2 heaping tablespoons sour cream
What you do:
Mix all of the salad ingredients together in a large bowl and stir to combine. Set chicken salad aside and make the dressing.
Stir all of the ingredients together and pour over your chicken salad just before serving and stir to combine all of the dressing. The salad and dressing can be kept in the refrigerator in separate, covered containers until you are ready to serve. If you need a little extra dressing to coat your salad add a little more sour cream as needed. Serve on sliced croissants held together with a frilly toothpick, on a bed of salad greens or in a lettuce cup.
